New Head Chef appointed!

The Shareholders of the Alderton Swan are delighted to announce the appointment of Mr Lyndon Cook as the new Head Chef.

Born and bred in Felixstowe, his interest in the finer culinary means of life started at the tender age of just 11, when he took a keen interest in the kitchen at a local restaurant at weekends. In his teenage years, Lyndon had the opportunity to understudy some of Suffolk’s finest chefs and by the age of 17 was entrusted with the responsibility of running the second kitchen at the restaurant Cordy’s in Felixstowe.

What we admire most of all about Lyndon is his passion for food. He absolutely adores it! For him, it’s not simply a job, but a way of life. Lyndon is exceedingly proud to have developed menus in rosette restaurants in the area and furthermore has a keen interest in reviving old and forgotten local recipes and cooking methods. So if you have some old recipes passed down through the generations, please don’t hesitate to share them with Lyndon. You never know, your recipe might be featured on our fine dining menu!

As Lyndon will tell you, in his line of work especially, you never stop learning and that means even in his spare time! At the moment he is studying in great detail the concept of hot and cold smoking of certain meat items, including his own home made sausage.

After spells working as the Head Chef in restaurants in Belfast and France, Lyndon is back home in Suffolk. He very much looks to the official opening of the Alderton Swan and serving customers some of the finest food Suffolk has to offer.
