The word tapas originates from the Spanish word tapar meaning to cover. Traditionally this was either a plate or some bread to cover sweet sherry.  It is said that King Alphonso X of Castille recovered from illness by drinking wine with small dishes between meals. He then ordered that all taverns could only serve wine if it was accompanied by a small snack or “tapas”.

Tapas has since evolved by using ingredients and influences from all over the world. In Italy tapas are known as cicchetti and in Argentina they are known as picada. Each country has their own interpretation, often known as street food or meze.
